TEQUILA 100% AGAVE
The Distillery
Topanito Tequila 100% Agave is distilled at Destiladora Del Valle de Tequila, located in the small town of Tequila in the state of Jalisco.
The distillery is also known as the legendary “Casa Maestri” and is the most awarded distillery in all of Mexico.
Founders Celia and Michael Maestri bring a combined 70+ years of experience in crafting high-quality tequila.
The Agaves
Only the finest Blue Weber agaves from the Highlands and Lowlands around Jalisco are sourced from long-standing supplier partners. During harvesting, the agaves are trimmed down to the “piñas” (the hearts) and then gently steam-cooked for 36–54 hours in traditional “hornos” — brick ovens. This time-honored art of “slow cooking” transforms carbohydrates into sugar, softens the fibers, and, most importantly, prevents unwanted caramelization of the sugars. This allows the agave’s natural, sweet flavor profile to be preserved to the fullest. For Topanito, a full 50% of the agaves are cooked in these traditional hornos, while the remainder is cooked in modern autoclaves.
The Distillation
After cooking, the cooked piñas are further processed in molinos (mills). As the fibers are crushed, the sugar-rich juice is extracted, while the fibers are rinsed with deionized, purified water.
This sweet mash then naturally ferments for 48–60 hours using wild yeasts. The resulting agave wine has an alcohol content of 5–9% and a full-bodied agave flavor. Distillation takes place in traditional alembic stills (“pot stills”) in two slow distillation runs, each lasting approximately five hours, which enhance the aromatic complexity of the finished spirit.
